The lovely thing about having a man who knows his way around the kitchen is every now and then being able to just sit back and watch the magic happen — ESPECIALLY when it comes to mexican.
I’ve tweaked these recipes ever so slightly to help give you EASY and DELICIOUS ways to use your oils. You wont regret it! No one ever regrets simple, easy Mexican.
Holy Guacamole
Ingredients:
⁃ 2 Avocados
⁃ 1/2 Red capsicum
⁃ 1/2 Red onion
⁃ 3 Cloves garlic
⁃ 1 Small Bunch Coriander
⁃ Lime Essential Oil
⁃ Salt
⁃ Pepper
⁃ Garlic powder
⁃ Onion powder
⁃ Olive oil
- OPTIONAL: Goats Cheese
Method:
1. Cut avocado into large chunks and place in large mixing bowl
2. Chop capsicum and onion into approx. 5-10mm pieces and add into bowl
3. Finely chop garlic and coriander and add into bowl
4. Add a dash of olive oil and squeeze lime juice into bowl
5. Liberally season with salt, pepper, garlic powder and onion powder
6. Mix together
Pico de Gallo
Ingredients
⁃ 6 Tomatoes
⁃ 1 Red onion
⁃ 3 Cloves garlic
⁃ 1 Bunch Coriander
⁃ Lime Essential Oil
⁃ Salt
⁃ Pepper
⁃ OPTIONAL: 1 Jalapeño
Method:
1. Chop tomatoes and onion into approx. 1cm pieces, finely chop garlic, jalapeño and coriander and place into a medium mixing bowl
2. Squeeze lime juice into bowl
3. Season with salt and pepper to taste and mix together
