The perfect nourishing meal for chillier, rainy nights like this one, and SUCH an easy way to get in lots of immune boosting herbs, spices and veggies!
INGREDIENTS:
2 Cups Dried Red Lentils
2 Sweet Potatoes
1 Cup Bone Broth / 1 TBLSP Best of the Bone Bone Broth Concentrate (I used the Turmeric and Ginger one)
Tin Brown Lentils
Tin Crushed Tomatoes
1 Brown Onion
1 Clove Garlic
1 TSP Curry Powder
1 TSP Coriander
1 TSP Cumin
1 TSP Turmeric
1 TSP Onion Powder
1 TSP Garlic Powder
1 TBSP Ghee
1 TBSP Coconut Oil
Salt and Pepper
Lemon Essential Oil
GARNISH:
Fresh Coriander
Greek/Coconut Yoghurt
METHOD:
1. Soak 2 cups of dried red lentils overnight.
2. Finely chop an onion and a clove of garlic and sauté in ghee, coconut oil, salt and pepper, and 1 teaspoon each of curry powder, coriander, cumin, turmeric, onion powder and garlic powder, and 3 drops lemon essential oil.
3. Add 1 tablespoon of Best of the Bone Turmeric and Ginger Bone Broth Concentrate with 1 cup water (or use 1 cup Homemade Bone Broth).
4. Add to saucepan soaked and drained red lentils, 1 tin brown lentils, 1 tin diced tomatoes.
5. Finely dice 2 sweet potatoes and stir through the lentil mixture.
6. Simmer for 20-30 mins, adding another cup of water at the half the halfway point, stirring regularly.
7. Once all the water has cooked through and sweet potato if soft, you’re ready to go! Serve with rice, fresh coriander and yoghurt of choice.
